Sticky Rice for the Ride

Doug went hear a former LOTAJA winner talk about his preparations and such for the ride. He talked about what he eats on the ride and one was sticky rice with ham and eggs. Challenge: Betty. We had to go to an Asian store to find the sticky rice. I came home and started reading about it and learned that I needed some new "equipment" in order to make it properly. Here is the new pot and basket. The basket was smashed from shipping so I wet it down, put it in the pot and weighted it down so it would dry in the shape of the pot.
Next I had to soak the rice overnight.
Here is the rice cooking on the stove.
You have to put a lid on because the rice is steamed.
Here is the rice as it is cooking. At this stage it is ready to flip. This is done by tossing the clump of rice and flipping it over in the basket.
It really is STICKY!
Now it's time to smash it out so it won't clump too much.
Next comes the ham and eggs.

Once the eggs are cooked I put the rice onto foil squares and rolled them. I will be making probably about 50 of these little guys for LOTOJA.
If they aren't a hit, at least I have a new hat to wear!
